A Weekly Date For Your Diary

I firmly believe that a little of what you fancy does you good, and we all deserve a sweet treat now and then. But what if I told you that you can enjoy a luxurious chocolate confection with notes of buttery caramel that was actually healthy?

Enter my caramel date bites, with no actual sugary caramel in sight. This is not so much a recipe but more of an assembly job.

Gather...

Six plump medjool dates

Natural nut butter (I love Meridian peanut butter)

Dark chocolate (minimum 80% cocoa solids)

Natural sea salt flakes or chopped nuts

All You Do Is...

Slice the dates lengthways, remove the stones and stuff with the nut butter, about half to one teaspoon depending on the size of the dates. Melt the chocolate and dip the dates in, then place the dates on parchment paper and drizzle over any remaining chocolate. Finish by sprinkling a few flakes of sea salt or crushed nuts, then place them in the fridge to set. Once set, pop them in a small container and enjoy as a treat with a cuppa for up to a week!

Dates have a natural soft caramel texture and flavour making these feel so indulgent, and they are absolutely delicious. Dates are an excellent source of both potassium and magnesium, while good dark chocolate, high in cocoa solids, contains high levels of antioxidants, as well as iron and zinc. Nut butter is packed with heart healthy fats and fibre, just ensure that it is 100% nuts.

These treats are like choosing the most indulgent truffle in the box, and a truly guilt free sweet treat!
