An Affordable Comfort Classic

Cheese and potato pie is hands down one of my favourite simple comfort dishes. It's a classic, timeless and frugal dish that pairs with whatever meat or fish you like, and is equally delicious on its own with a chunk of good bread!

I first made it at school in my home economics class sometime in the early 80's. At that time budgets were tighter, so whatever I made in home economics was always served to my family that evening. I remember carrying it home so carefully, and my Mum serving it with fish fingers, which everyone enjoyed. I thought I was a real domestic goddess for making something so fabulous!

Of course, it's a ridiculously easy recipe, but then the best ones often are aren't they?

These days budgets are once again becoming tight, especially for those of lower income such as pensioners. Recipes like this are affordable, tasty and filling, with the promise of leftovers to be enjoyed another day.

Gather...

Potatoes for as much mash as you fancy

A chunk of your favourite cheese, grated

A generous knob of butter

A little milk, or cream if you're feeling decadent

Salt and pepper

Fresh, chopped parsley

All you do is...

Simply cook and mash the potatoes with the butter and milk stirring in three quarters of the grated cheese, the fresh parsley, salt and pepper. Smooth into a buttered oven proof dish and sprinkle with the remaining cheese. Bake at 180 fan or equivalent for around 25 minutes, or until lightly golden and piping hot. That's it!

You can add extras such as some sautéed onions if you'd like a more punchy flavour, or maybe even create your own version.

I'm still making this for supper, but now I'm the Mum serving it with good old fish fingers.
