Quick Courgette Frittata
Serves One
This delicious frittata is perfect for a light meal anytime of day, and makes good use of those gluts of summer squash. You can use any courgettes you like, and you can also throw in halved cherry tomatoes, chopped spring onions or a little chopped spinach. This is so quick to make, affordable and nutritious. A must for your repertoire!
Gather...
A handful of diced fresh courgette
2 large eggs
Sea salt and black pepper
A knob of butter
A matchbox sized piece of your favourite cheese grated.
All you do is...
Whisk up the eggs and add a pinch each of salt and pepper. Melt the butter in a non stick frying pan then, on a medium heat, sauté the courgettes until soft and taking on a nice golden colour. Pour over the egg mixture, and when the frittata is almost cooked through, sprinkle over the cheese and fold over. Cook for a further minute and then serve.
Delicious on its own or, to make it more substantial as a main meal, serve with fresh crusty bread and a side salad.
Courgettes are a great source of vitamin B6 and vitamin C, eggs are a great source of vitamins D, E and B6, zinc and calcium, as well as beneficial antioxidants. Add spinach for an iron boost or halved cherry tomatoes for a boost of vitamin C and lycopene.
